Quick and Easy Homemade Granola – Kajalvora

A wholesome delicious oil free naturally sweetened granola! Granola can be enjoyed in so many different ways. It’s perfect for breakfast, snack, dessert, and even eating by the handful. Unfortunately most store brought granola have added sugars and oils but don’t worry you will see that this recipe is quick, super easy and doesn’t take much at all!

Ingredients:
3 cups (270 g) rolled oats
1 cup (140 g) raw mixed nuts (I used almond and walnuts), roughly chopped
1/2 cup (35 g) raw seeds (I used pumpkin seeds but you can choose any other raw seeds)
1/2 cup (50 g) organic dried fruits (I used raisins and goji berries)
1 cup (175 g) dates
1/2 cup (120 mL) tahini (sesame-seed paste – a MUST have in your kitchen)
1/2 tsp cinnamon or cardamom powder

Directions

Preheat oven to 150 C / 300 F.
Mix dates, tahini and 3 Tbsp (45 mL) water in a food processor and blend until creamy.
Add all ingredients to a large bowl and mix to combine.
Spread granola evenly on baking paper and press flat. Bake for 30 minutes, or until golden brown, stopping one or two times to stir and flatten again if needed to prevent burning and to ensure the granola cooks evenly.
Let cool and transfer to an airtight container to store after the granola has completely cooled.

If an oven is not available, you can heat a large skillet and add the mixture and continuously stir on medium heat until starting to brown and crisp, about 8 to 10 minutes. Remove from heat and allow it to cool. Transfer to an airtight container to store after the granola has completely cooled.
